Spicy sweetcorn, mango & tomato salsa
Ingredients
- 165g cooked sweetcorn
- 180g cherry tomatoes
- ½ cucumber
- ½ red onion
- ½ mango
- 1 handful of fresh mint
- 1 handful of coriander
- ½ red chilli
- Juice of 1 lime
- 1 tablespoon extra virgin olive oil
- Sea salt & pepper
Directions
- Chop the tomatoes, red onion and mango into small chunks.
- Halve the cucumber, scoop out the seeds and then slice it into small pieces.
- Finely chop the chilli, mint and coriander.
- Combine all of the ingredients in a bowl and season to taste.
