Spicy sweetcorn, mango & tomato salsa

Ingredients

  • 165g cooked sweetcorn
  • 180g cherry tomatoes
  • ½ cucumber
  • ½ red onion
  • ½ mango
  • 1 handful of fresh mint
  • 1 handful of coriander
  • ½ red chilli
  • Juice of 1 lime
  • 1 tablespoon extra virgin olive oil
  • Sea salt & pepper

Directions

  1. Chop the tomatoes, red onion and mango into small chunks.
  2. Halve the cucumber, scoop out the seeds and then slice it into small pieces.
  3. Finely chop the chilli, mint and coriander.
  4. Combine all of the ingredients in a bowl and season to taste.
