Courgetti with Walnut & Rocket Pesto
Ingredients
- For the courgetti
- 2 courgettes
- 1 handful of sundried tomatoes
- For the pesto
- 3 large handfuls of rocket
- 50g walnuts
- 100ml olive oil
- 2 tablespoons water
- 2 garlic cloves
- Juice of ½ lemon
- Sea salt & pepper
Directions
- Spiralize the courgettes into a large bowl.
- To make the pesto, blend all the ingredients in a food processor until smooth.
- Add the pesto to the courgetti and mix well.
- Combine the sundried tomatoes with the courgetti.
- Season to taste and serve.
