BANANA CAKE
Ingredients
- 5 large over-ripe bananas
- 1 cup walnuts
- 2 cups pecans
- 1 cup rice flour
- ½ a cup date syrup
- 3 tablespoons chia seeds
- 2 tablespoons cinnamon
Directions
- Pre-heat the oven to 145°C.
- Blend the walnuts and pecans in a food processor for approximately 30 seconds so that they form a flour.
- Combine this with the rice flour, date syrup, chia seeds and cinnamon in a large mixing bowl.
- Mash the bananas and stir them in.
- Pour the mix into a loaf tin greased with coconut oil.
- Bake for 40-60 minutes.
