BANANA CAKE
Ingredients
5 large over-ripe bananas
1 cup walnuts
2 cups pecans
1 cup rice flour
½ a cup date syrup
3 tablespoons chia seeds
2 tablespoons cinnamon
Directions
Pre-heat the oven to 145°C.
Blend the walnuts and pecans in a food processor for approximately 30 seconds so that they form a flour.
Combine this with the rice flour, date syrup, chia seeds and cinnamon in a large mixing bowl.
Mash the bananas and stir them in.
Pour the mix into a loaf tin greased with coconut oil.
Bake for 40-60 minutes.
