Courgetti with Avocado & Spinach Pesto
			    
			
		    
									
								
				
					Ingredients
					
- For the courgetti
 
- 2 large courgettes
 
- 10 cherry tomatoes
 
- For the pesto
 
- 1 ripe avocado
 
- 2 large handfuls of fresh basil
 
- 1 large handful of spinach
 
- 50g pine nuts
 
- Juice of 1 lemon
 
- 1 tablespoon extra virgin olive oil
 
- Sea salt & pepper
 
				 
				
					Directions
					
- Spiralize the courgettes into a large bowl.
 
- To make the pesto, blend all the ingredients in a food processor until smooth.
 
- Add the pesto to the courgetti and mix well.
 
- Chop the cherry tomatoes in half and combine with the courgetti.
 
- Season to taste and serve.
